1 tsp rock salt
METHOD:
1. Wash and cut the carrots (and beetroot) into long, thin sticks.
2. Place them in a clean glass jar or ceramic pot.
3. Add mustard powder and salt, then pour in water.
4. Stir well and cover the jar with a muslin cloth.
5. Keep it in the winter sun for 3–5 days, stirring once daily.
6. When the liquid turns slightly fizzy and pleasantly sour, refrigerate.
